~ Sharing new possibilities of Japanese sake made with Uonuma Koshihikari rice with visitors engaged in overseas markets ~
Tsunan Sake Brewery Co., Ltd. (Head Office: Tsunan Town, Nakauonuma District, Niigata Prefecture; President: Kengo Suzuki; hereinafter “Tsunan Sake Brewery”) exhibited at “JFEX SUMMER (6th International Food & Beverage Expo)”, held at Tokyo Big Sight from July 9 to 11, 2025, where we conducted extensive business discussions and exchanges with a wide range of domestic and international buyers and visitors.
At this exhibition, our booth attracted a diverse range of industry professionals, mainly from across Asia, who tasted our products firsthand. Among them, our “GO GRANDCLASS Uonuma Koshihikari Edition”, made with Uonuma-grown Koshihikari, one of Japan’s most renowned edible rice brands, received numerous positive reviews such as “rich umami not commonly found in typical sake” and “clean taste without off-flavors or harshness.” These evaluations reaffirmed its accessibility even to sake beginners and potential for overseas markets.


In addition, our “PIN Bottle” series (GO DINER, GO DOLCE, GO VINO), which proposes a new style of sake presentation, garnered significant attention for their “Instagram-worthy design” and “practical resealability”, receiving favorable responses especially from younger consumers and restaurants.


Furthermore, we showcased the “SAISEI Regenesome Supplement”, a collaboration product, along with “SAKESOME”, a research initiative on nanoparticles derived from sake, which drew considerable interest from health-conscious visitors.


Through this exhibition, Tsunan Sake Brewery was able to share with many people from various countries and regions the concept of “sake that meets the needs of the times” and the “upcycling potential of sake”. We will continue to pursue innovation rooted in tradition, deepen partnerships with domestic and international companies, and promote the appeal of sake from Tsunan to audiences around the world.
Tsunan Sake Brewery’s Sake Upcycling Project
The “Sake Upcycling Project” led by Tsunan Sake Brewery is an initiative that aims for advanced utilization of sake byproducts, especially sake lees, leveraging our extensive experience in their use as food ingredients. We are challenging innovation across diverse fields by utilizing sake lees as a resource, including the development of semiconductor technologies using carbon materials derived from sake lees, application research of “SAKESOME”—nanoparticles derived from sake components—and applying sake-derived materials to the production of cultured foods (cultivated meat). Through these efforts, we strive to create innovations that integrate traditional industries with cutting-edge technologies.

Tsunan Sake Brewery Co., Ltd. is a sake brewery located in Tsunan Town, Nakauonuma District, Niigata Prefecture—one of Japan’s heaviest snowfall regions. The brewery uses pristine natural spring water from mountains rising over 2,000 meters and locally grown rice varieties such as Gohyakumangoku and Uonuma Koshihikari. Tsunan’s brewing style blends traditional techniques with innovation, embodied in its brand concept “Brew for Future – Brewing a Coexistent Future.” In 2025, the brewery was awarded the Governor of Niigata Prize (1st place) at the Echigo-ryu Brewing Technology Championship.
