On October 18, 2025, Tsunan Sake Brewery Co., Ltd. (Headquarters: Tsunan Town, Niigata Prefecture; President & CEO: Kengo Suzuki; hereinafter “Tsunan Sake Brewery”) participated in the official University of Tokyo Homecoming Day 2025 program, the “Todai Kuramoto-kai Sake Tasting Event,” where it presented three selections from its “GO” sake series.
The event welcomed University of Tokyo alumni, researchers, and participants with strong interests in fermentation science, brewing technology, and resource circulation. Visitors enjoyed Tsunan Sake Brewery’s sake, which embodies its brewing philosophy of integrating science with terroir.
In addition, DJ Kamoshitaro, an ambassador of Tsunan Town’s fermentation culture, supported on-site guidance and communication about Tsunan Sake Brewery’s sake, creating a lively and engaging atmosphere at the booth.
About the Tsunan Sake Brewery Lineup
The “GO” series is a new sake brand born from the fusion of Tsunan’s terroir—defined by one of Japan’s heaviest snowfall regions—and Tsunan Sake Brewery’s scientific brewing approach.
Each product is designed around the concept of marriage with food culture, proposing new styles of sake enjoyment. The three selections presented at this event introduced innovative perspectives on their respective culinary themes:
- GRANDCLASS — Rice and regional identity
- VINO — Fermentation and the world
- DOLCE — Sweetness and lingering finish
Significance of the Exhibition and Future Outlook
Tsunan Sake Brewery positions itself as a practitioner of “fermentation innovation,” bridging academia, science, and food culture. This event not only strengthened relationships with universities and research institutions, but also reaffirmed the potential for new collaborative research initiatives, industry–academia partnerships, and international expansion, all originating from sake.
Moving forward, Tsunan Sake Brewery plans to advance the following initiatives:
