Tsunan Sake Brewery Co., Ltd. (Headquartered in Tsunan Town, Niigata Prefecture; President: Kengo Suzuki; hereinafter “Tsunan Sake Brewery”) participated in the “Startup x Restaurant Networking Event” held on Thursday, June 19, 2025, at the Sustainable Food Museum in Minato-ku, Tokyo.
The event was hosted by Sustainable Food Asia Inc. to celebrate the launch of the third edition of the “TORANOMON JUST RIGHT NEW FOOD” initiative. It was organized as a tasting and networking event to connect food tech startups with restaurants in the Nishi-Shimbashi and Toranomon areas.
The purpose of the event was to create opportunities for dialogue between startups offering regionally unique and functional food products and local restaurant owners. A total of nine companies presented, both on-site and online, and exchanged ideas with over ten restaurant professionals.
Tsunan Sake Brewery introduced its premium sake “GO GRANDCLASS Uonuma Koshihikari Edition,” made with 100% Uonuma-grown Koshihikari rice. This product won a Gold Medal at the Kura Master Sake Competition in 2024 and is crafted using spring water from the snowy Tsunan region, proprietary yeast strains, and smart brewing methods powered by generative AI—earning it the reputation of being a “miraculous sake born from the region.”
President Kengo Suzuki took the stage as a presenter to explain the story behind the product, its refined quality, and Tsunan Sake Brewery’s commitment to sustainability, including sake lees upcycling initiatives like “melty snow.”

Also featured at the event were innovative food products such as “SAISEI RegeneSOME Supplement” by RegeneSOME Inc., containing high levels of ergothioneine, and egg-free “Koji Mayo” by Orizé Inc. These items spurred active tasting sessions and lively discussions.
