Tsunan Sake Brewery Participates in “Sustainable Food Showcase vol.7” and CEO Kengo Suzuki Joins Panel Discussion

Tsunan Sake Brewery Co., Ltd. (Headquarters: Tsunan Town, Nakauonuma District, Niigata Prefecture; CEO: Kengo Suzuki; hereinafter “Tsunan Sake Brewery”) is pleased to report its participation in Sustainable Food Showcase vol.7, held on Thursday, July 10, 2025, at the Sustainable Food Museum in Nishi-Shimbashi, Minato-ku, Tokyo, where CEO Kengo Suzuki appeared as a panelist.

The theme of this event was “The Potential of Fermentation and Food through Tradition and Advanced Technology.” During the panel discussion, Mr. Suzuki discussed the significance of Tsunan’s unique fermentation culture nurtured in its heavy snowfall environment, and shared business perspectives on passing on this tradition to future generations. He emphasized that “it is difficult for a business to be sustainable solely because it is good for the environment or local community; it is essential to communicate concrete value to customers.” He proposed to the audience the importance of pursuing both sustainability and customer benefits as a path forward for the development of fermentation and food culture.

At the event, Tsunan Sake Brewery also showcased its sake lees gelato alongside GO GRANDCLASS Uonuma Koshihikari Edition sake—a premium sake brewed using traditional techniques, indigenous yeast, and ultra-low temperature triple fermentation, characterized by a clean, fresh taste without off-flavors, born from the harsh natural environment of snowy Tsunan. This sake is a gold medal winner at Kura Master 2024. In addition, attendees enjoyed a tasting of sake lees pound cake developed as part of Tsunan Sake Brewery’s sake upcycling project, which was well received.

The venue also featured various food-tech-related items that drew high interest from attendees, including Fried Potatoes Umamo Flavor using AlgaleX’s algae-derived umami seasoning and CRUST BREAKINGBREAD ALE, a craft beer from CRUST JAPAN aimed at reducing food loss.

Going forward, Tsunan Sake Brewery will continue to propose new food cultures starting from sake, by combining “fermentation,” “sustainability,” and “advanced technology,” contributing to the social implementation of longevity technologies.
