Tsunan Sake Brewery Co., Ltd. (Headquarters: Tsunan Town, Nakauonuma District, Niigata Prefecture; Representative Director: Kengo Suzuki; hereinafter referred to as “Tsunan Brewery”) participated in the Mini Symposium of the East Japan Branch of the Society of Applied Carbohydrate Sciences, held on November 30, 2024, at the “Tokimeito” Niigata University Ekimae Campus. Tsunan Brewery showcased its initiatives in the corporate exhibition booth.
The exhibition featured innovative fermentation processes, such as the potential of the “Green Fermentation” technology and next-generation “Smart Brewing” techniques leveraging IoT and AI. Additionally, the company displayed its premium sake, GO GRANDCLASS Uonuma Koshihikari Edition, which contains high concentrations of α-EG (ethyl glucoside). This sake is highly anticipated for its potential anti-aging benefits and health-conscious appeal, representing a new approach to enhancing the prestige of Japanese sake.

The booth also included a presentation on Jogurt, a yogurt-like fermented food handled by FARM8. Jogurt is a novel product combining rice koji and lactic acid bacteria, utilizing Niigata’s fermentation technology to create a unique blend of smooth acidity and sweetness. Being dairy-free and plant-based, it is suitable for individuals with lactose intolerance or those following a vegan diet. Recognized as a functional food that supports gut health, Jogurt has gained popularity among health-conscious consumers.
