Tsunan Sake Brewery Co., Ltd. (Headquarters: Tsunan Town, Nakauonuma District, Niigata Prefecture, hereinafter referred to as “Tsunan Sake Brewery”) is pleased to report its participation in the Hyper Interdisciplinary Conference Indonesia 2025 (HIC in Indonesia 2025), held on February 8, 2025, in Indonesia. At the event, Tsunan Sake Brewery introduced its fermentation technologies and engaged in discussions on the potential of Japanese fermentation technology to address health challenges and enhance well-being in the ASEAN region.

Introduction to Tsunan Sake Brewery’s Approach to Fermentation Technology
Tsunan Sake Brewery’s Innovations in Fermentation Technology
While deeply rooted in traditional sake brewing, Tsunan Sake Brewery actively engages in the research and innovation of fermentation technologies. Leveraging the unique snow-covered environment of Tsunan Town, the brewery has achieved quality enhancement through low-temperature fermentation. Furthermore, it has introduced new technologies such as “Smart Brewing,” which integrates Generative AI into sake production. These initiatives not only enhance the flavor and quality of sake but also explore possibilities such as producing sake from premium Uonuma Koshihikari rice and applying fermentation technology in the food and medical sectors.
The Global Role of Fermentation Technology
Fermentation technology plays a crucial role worldwide in reducing food waste, enhancing nutritional value, and building sustainable food supply systems. Tsunan Sake Brewery is researching fermentation-based processes that transform unused resources into high-value-added food products, as well as fertilizers and feed that contribute to environmental sustainability. Through these efforts, the company aims to reduce environmental impact, strengthen food security, and promote the global value of Japanese fermentation technology.
Potential Applications of Fermentation Technology in Space
Tsunan Sake Brewery is also exploring the application of fermentation technology in space. It conducts research on enhancing food functionality and taste, envisioning the implementation of a resource-recycling-based food supply system for long-term space missions. In space, microbial-based food production could be a key to sustainable life support. Through its research and development, Tsunan Sake Brewery aspires to contribute to food production and nutrition management in space, while also advancing sustainable agriculture and food supply systems on Earth.
