Tsunan Brewery Participates in the “Tsunan Sustainable Study Tour” by Global Shapers Community Yokohama

Tsunan Sake Brewery Co., Ltd. (Headquarters: Tsunan Town, Niigata Prefecture; President: Kengo Suzuki; hereinafter referred to as “Tsunan Brewery”) joined the “Tsunan Sustainable Study Tour” organized by Global Shapers Community Yokohama (GSC-Y) on January 25, 2025. The tour provided an opportunity to learn about the current state and future potential of Tsunan Town. Additionally, Tsunan Brewery welcomed the tour participants to its sake brewery, sharing insights on its vision for a regenerative fermentation industry and introducing the sake production process as a case study of brewing with locally produced rice.

A representative from Tsunan Town provided an overview of the town’s resources, challenges, and industrial potential. During the Q&A session, active discussions took place, including questions about Tsunan Town and proposals for new initiatives from tour participants.

Tsunan Brewery Tour

The participants learned about Tsunan Brewery’s approach to producing sake from Uonuma-grown Koshihikari rice, along with the challenges and opportunities involved. A sake tasting session was also held, where participants provided feedback on the flavors and concepts of different sake varieties produced by Tsunan Brewery.

Tsunan Sake Brewery is located in Akinari, Tsunan Town, Nakauonuma District, Niigata Prefecture. The area is known for its heavy snowfall, and the brewery uses natural spring water sourced from the nearby 2,000-meter-high mountains. The sake is crafted using locally grown “Gohyaku Mangoku” and “Uonuma Koshihikari” rice, with a focus on sustainable brewing that coexists with nature.
