Nestled in the secluded region of Tsunan, Niigata, Tsunan Sake Brewery has long embraced the harsh, snow-rich environment to uphold its traditional sake-making craftsmanship. While preserving this heritage, we are embarking on a new challenge: offering Junmai Daiginjo “GO LUNAR” exclusively on CAMPFIRE.

A Challenge to Pioneer the Future of Fermentation Technology

Kengo Suzuki, President of Tsunan Sake Brewery, has been exploring the possibilities of fermentation for many years as a researcher in microalgae and fermentation technology.

During this journey, he met another key figure behind this project, Space Caster® Reimi Enomoto. Enomoto studied bioscience during her university years and has dedicated her career to making space-related topics more accessible. Their conversations about the future of fermentation led them to consider its potential in space environments.

Fermentation is a process that utilizes microorganisms to create food. This technology, capable of sustaining a food culture even in closed environments, holds great potential for future space food production.

Tsunan Sake Brewery is already conducting research on fermentation technology with the goal of establishing a sake brewery on the Moon by 2040. The company has also launched a virtual sake brewery in the metaverse—“Lunar Brewery”—to explore the possibilities of sake brewing in space.

This initiative could be a stepping stone toward fermentation technology that will sustain future space food culture. “GO LUNAR” represents the first step in this ambitious challenge.

“GO LUNAR” is a completely new Junmai Daiginjo that blends Tsunan’s traditional brewing techniques with the latest fermentation technology.

    Instead of conventional sake rice, we use locally sourced Uonuma Koshihikari rice, resulting in a delicate and transparent flavor.

    By harnessing the power of microorganisms and fermenting at low temperatures over time, we enhance the sake’s elegant ginjo aroma.
  • Wine Barrel Aging for a Rich and Refined Flavor
    Inspired by wine aging techniques, this process expands the potential of sake by introducing new layers of complexity.

What comes to mind when you hear the phrase “From a Hidden Brewery to Space!”?

We are now at a turning point where living in space is becoming a reality. It is said that by the 2040s, 1,000 people will be living on the Moon. Former U.S. President Donald Trump even declared in his inaugural speech that the U.S. would send humans to Mars.

For these dreams to materialize, we must develop sustainable space habitats. Microorganisms, which play a crucial role in food fermentation on Earth, will also be essential in space.

And above all, if you were on the Moon, wouldn’t you want to toast with sake while looking back at Earth?

The development of “GO LUNAR” marks the first step toward this exciting future. I hope this project will inspire you to think about quality of life (QOL) on a space scale!

Tsunan Sake Brewery is located in Akinari, Tsunan Town, Nakauonuma District, Niigata Prefecture. The area is known for its heavy snowfall, and the brewery uses natural spring water sourced from the nearby 2,000-meter-high mountains. The sake is crafted using locally grown “Gohyaku Mangoku” and “Uonuma Koshihikari” rice, with a focus on sustainable brewing that coexists with nature.
